Carrot Soup

60g butter, 1 onion, finely chopped, 500g carrots, peeled and chopped, 125g potatoes, peeled and diced, 1 litre water with or without stock cube, or home-made stock, 125ml milk, salt and pepper

Melt the butter in a pan and soften the onion in the butter for a few minutes. Add the carrots, potatoes and seasoning. Stir and mix well together. Then pour in the water or stock, simmer with the lid on until the veggies are well cooked - about 30 minutes. Allow to cool, blend in a food processor or blender, then add the milk and reheat. Add more water if required.
